'the colour of the tomatoe sauce is so red because they are fresh and have ripened properly - not put in cold storage (unlike most shop bought toms). If your only option is to buy tomatoes from a shop always buy ahead of time and leave them on window sill to ripen (up to a week)  as they are always unripe and need to develop flavour                                                               - J Nichols
